The cutting |

The cutting period is the beginning of a new year of growth for the vineyards. This is the first operation after the harvest. It takes place from november to march with a break during the coldest days of december and january. The cutting consists in removing the "dead" wood of the vinestocks but also principaly in selecting and preparing the woods which will be frame for this new year. |

| The "dead" woods are either cut or crushed in the rows of the vineyards to fertilize the soil. | ||
