In our cellars ...The vintage in the cellars
The vintage in Champagne are realised manually in a traditional way. It is the results of a year of work in the vineyards and the beginning of several months of patience in the cellars.

The wine producer is always waiting the harvest with eagerness. The vintage is the result of one year of hard work in the vineyards and the shift between the vineyards and the cellars.

The wine producer works with nature. The quality and the quantity of collected grapes are the fruit of the rigorous operations realised all along the year but also of the climatic conditions, mostly during the flowering and the month before the harvest .

An harmonious ratio between sun and rain will allow an optimal contribution in sugar.

The date of the harvest is fixed for each village by the Comite Interprofessionnal des Vins de Champagne (CIVC). A race beins then to pick up the grapes at the good maturity.

In Champagne, the harvest is realised in a traditionnal way with a manual picking. It last around 10 days including week-end.(The grapes don't wait...) Some of our grape picker have been coming for more than 20 years.
